Application of Stable Isotope Technique in Food Safety Field

  • In order to understand the application hotspots of stable isotope technology in food safetyduring last ten years, this paper focus on the related domestic research. From three aspects, the rapid development of stable isotope in food safety and the technical level that has been standardized have been reviewed. These three aspects include: the application of stable isotope ratio determination in food traceability technology, the application of stable isotope technology in fake identification of food and the application of the detection technique of stable isotope internal standard reagent combined with isotope dilution mass spectrometry in the detection of harmful substances in food. With the development of stable isotope technology and the accumulation of databases, relevant theories are constantly improving, and it will become one of the crucial application technologies in the field of food safety.
