The Effects of ~(137) Cs Irradiation and MAP on the Survival and Growth of Salmonella Spp in Pork

  • 摘要: 进行了 1 3 7Cs辐照和 MAP综合处理对沙门氏菌在灭菌猪肉中致死和残存菌生长状况的研究。研究采用反应面设计, 并由得到的数据推算回归方程。结果表明, 沙门氏菌的致死明显受辐照剂量的影响, 残存菌量的对数与辐照剂量成反比;而 MAP对辐照沙门氏菌的致死无明显影响。 5种不同 CO2 体积分数对沙门氏菌辐照后的残存菌生长也无明显影响。辐照和 MAP综合处理并不比单纯辐照能更有效地控制沙门氏菌的致死和残存菌的生长。与空气样品相比, 50 % CO2 的样品在辐照处理时表现出一些对沙门氏菌的保护作用。

     

    Abstract: The effects of 137 Cs irradiation (0 to 2 kGy) and MAP combination treatment on the survival and growth of Salmonella Spp are studied in sterile pork in the absense of competing microflora. A central composite response surface design is used to test the response of the pathogen to the treatments in a single experiment. Predictive equations are developed from the analyses of variances of the resulting data. The results show that the survival of Salmonella is singnificant decrease with the increase of irradiaiton dose, but there are no evident effects on the survival of salmonella due to the MAP. Five kinds of MAP don't show the difference on the growth of Salmonella. 50%CO 2 treatment showes the irradiation protection of Salmonella compared with air. The resullts indicate that the treatment combined irradiaiton with MAP is not more effective for controlling the survival and growth of Salmonella Spp.
